Do not be the Belgian chef a story of a descent into the abyss
At the top of the chain running from the kitchen is the position of Executive Chef. The Executive chef is the general of the kitchen troops, overseeing and implementing the kitchen staff in the same operations every day. Not all chefs aspire to this position, as the executive chef does not really have time to cook. And since the position is a management rather than engaging in the culinary arts, executive chef position is one that only takes into its operation is so large that you really need one!
Others see the executive chef's career and the opportunity to apply their knowledge a canvas bigger. Free stirring the sauce or the organization of the rosettes, the executive chef becomes the brain of the kitchen and meal plan as a player Chess plans an attack.
Chefs, being an artistic profession, may have some problems in temperament to go with his talent. With a chef, this is imperceptible, but with a staff of twenty cooks with a hierarchy of leadership, personal differences tend to emerge. The executive chef has to cope with conflicts develop, and it is more important to be a source of conflict themselves. How out of control behavior one can cook with it? Here we take a look to a career that emphasizes the answer to that question only:
"The Belgian Chef" was a televised cooking show that lasted three and a half seasons on cable channels in New England since the autumn of 1994 until March 1996. This was long before the days of the Food Network.
Chef Enrique Perlingine received demonstration, ostensibly preparing specialty dishes from Belgium and Alsace, with occasional French goods. Each week, a guest should on the show. When the show was in her first season, booked guests for the study were the typical culinary crowd you would expect: the restaurateurs and chefs, some quite famous in their own right. After a while, some narrow-gauge local celebrities were also making special appearances. As passed show time and seized a regular audience, began to land nationally known artists and media personalities.
Perlingine form was often confrontational imitating the avant-garde theater of the 1960s. It was clear to everyone that he was doing this with a wry sense of humor, and the guests were More Than happy agreeing with the joke. He infuses each performance with a dose of charismatic personality, and each episode has higher ratings than the last.
He had a drinking problem too, and are loaded with a mercurial temperament, which were not so close to the surface in the first season. At the end of the second season, however, had begun to drift into rambling and incoherent rants on the camera, sometimes completely lose sight of the thread of the series. His behavior was increasingly irrational over the second season, which ended late last episode of the season when he collided with guest star Dinah Shore a mallet.
This behavior led to concern among producers. It seemed her star was getting a little too much on his television character. management prevailed Perlingine him to spend most of the summer of 1995 in a rehabilitation program, and in September the show turned to look cool and smooth considerably, ready again to be assistant favorite cuisine from around the world.
What a shame, it was not passed. In the third episode of the third season, threw a frying pan St. Jacques iron results in coquilles Morton Downey Jr. Now, if you remember Morton Downey Jr., it would be a bit suspicious as to why famous television personality abrasive was cast as a guest with this chef who was already known to fit in the first place. You do not have to be crazy or drunk to want to the brain Downey a tray of seafood. As if this were not enough, Perlingine then sat down and began to consume a bottle of Burgundy while reading a speech to his wife, Esmeralda, while in the air. The coquilles I have not even finished.
Subsequent episodes experienced a drop growing Perlingine mental state. Frequently insulted and threatened customers, and repeatedly hurt them. Drank during the show, and at the end of an episode that he was often so drunk as not to find the range. However, scores soared. Perlingine was announced as the "Howard Stern" Gallic cuisine and dealers out of the studio demanded hundreds of dollars for good seats in the days when an unusually strong assessment or fleet-footed was scheduled to appear with their houseguest. By this time had become dependent Perlingine injected methamphetamine. Blinded by the ratings, the producers managed to convince management to keep out Perlingine rehabilitation. This was before the show things like Jerry Springer is known to television, and producers are just waking up to the television audience had morbid fascination for psychological instability.
So he spent the winter with a few more explosions, and then, on Thursday, March 3, 1996, the unstable world of cooking, finally collapsed. Actress Vanessa Redgrave appeared as a guest of the day in the program. For the first quarter of an hour, was strangely quiet Perlingine then with trembling hands, pulled out a revolver from his touch. Redgrave left the scene shouting, while Perlingine avidly in pursuit. For forty-five minutes while the cameras rolled and a terrified gaffer tried unsuccessfully to complete Perlingine left souffle, Perlingine Redgrave stalked through the set and the backstage area, and staff are start shooting alarmed to hear it! At one point he pursued through the audience Redgrave, firing shots over the seats in most abandoned. Finally, as the final credits, the police arrived. Perlingine was cornered on the scaffolding above the stage and fatally shot. The series was canceled immediately, and has not been offered for syndication.
So what can we learn from the fate of Henry Perlingine? If you are a good enough cook, you can be released under a strap long before anyone has had enough of you. However, his work as executive chef is to stop things before they get that far.
